it's a big cookie. my hands aren't that small.

i made cookies. baking always feels.. comforting to me. (eating the end product feels pretty good as well..) i've never really baked cookies before. it's usually my seester that does it. she's The Cookie Queen in our house. a well deserved title, yes ma'am. but she's not here. so i had to make do.

i was in the grocery store looking through the health foods refridgerators. i've recently become kind of fascinated with veganism. not that i'm thinking of becoming a vegan, i'm more just interested in the philosophy behind it.. i do like the idea of being more conscious about what you eat, where it comes from and all of that.. it's pretty hard core..

so i bought this buttery spread. 100% vegan. no dairy. and it's pretty good. it's made from soybeans and all of that kind of stuff. on top of that it doesn't contain GMOs or trans fatty acids. it's nearly fat free and it still tastes buttery. at any rate, i threw it into the cookie dough recipe and crossed the ol' fingers in hopes of getting some delicious cookies out of the oven in approximately ten minutes. from then. from the time i crossed my fingers initially. erm. anyway.

they're good. i didn't cook the first sheet/tray long enough, i don't think. and i left the second tray in slightly too long. and the last cookie (pictured above) came out pretty well. although by the discrepancy in color from the middle to the edge, i'd say it was in the oven a bit too long also. there's also the "hot pan sitting on top of the oven while the tray before it is inside making the tray all nice and warm and starting to cook the dough very very slightly" factor. ho hum. they're good enough to eat. and that's good enough for me.

(i did use ghirardelli chocolate chips, though. that increases the flavorability by twofold, i reckon.)

anyway. those are a bunch of words trying to say that i'm full from eating too many cookies.

To keep your cookies from spreading out all flat like that, add more flour than the recipe calls for. Not much, but I can't tell you exactly how much. It's a dough consistancy thing more than a measuring thing.

Ah the things I could do with a cookie that size. Eat it I suppose. Hmm. Anyway, nice work. (Down with GMOs!)
